~Mix The Mix #1~
Brownies
During the initial COVID panic I ran out and got a few boxed food items for the pantry. I don’t know what I was thinking of, maybe an invasion or something and I would have time to bake, but yeah… I bought some mixes and a couple of them were brownie mixes with upcoming expiration dates. Since the craving was already there for something brownie-ish, I had to hack it and have it. So I did.

In addition to the directions on the box, I added a bit of cayenne to chocolate. Years ago during a cake class one of the elder ladies whispered into my ear that it made the chocolate flavor standout. I have been doing that every since. So the mix got about a 1/2 tsp along with a pinch of salt and a good little pour of whiskey.
Then those white chocolate chips were calling my name. All the way from the pantry I heard them say, “Mrs. Shecky you forgot me!” In answering that call white chocolate chips were tossed in with about a cup of chopped walnuts. I like a lot of nuts and hackity hacks but like I have said before… this is Mrs. Shecky’s Kitchen and the beauty of your kitchen is that you get to add your own goodies to taste and don’t be afraid. This is not the first time a mix has been hacked.

What did I do next? I baked the whole thing.

Since I did not want this to burn with all the additions I timed it to the lowest bake time and lowered the oven temp 25 degrees. All turned out just fine.

So, the moral of the mix up the mix story is:
Use the mix and don’t be afraid, just hack it… or not. This isn’t a science fiction movie, everyone uses a mix now and then. They are not that horrible for an occasion or two when needed and, they are just plain easy to use. Add cranberries, raisins, flavored extracts, a different type of nut and spices to grab your taste-buds. Put a swish of your home canned jams and jellies on your serving dish and spruce them up with a sprig of rosemary or peppermint. Your taste buds are the only limits and a tad of whisky was a pretty good addition and I am going to try some Praline Liquor next time with peanut butter. After I eat that, I will be shooting my bathroom scale (post to come on Instagram).
